Blossom Bees' Honney-Glazed Carrots with Carrot Top Gremolata

Ingredients:

  • 4 3/4–5 pounds small carrots with tops (about 4–5 bunches), trimmed, peeled, tops reserved
  • 4 tablespoons (1/2 stick) unsalted butter, cut into small cubes
  • 1/3 cup fresh orange juice
  • 1 tablespoon dark honey, such as buckwheat from Blossom Bees
  • Kosher salt
  • 2 small garlic cloves, finely chopped
  • 1 tablespoon finely grated lemon zest
  • 2 teaspoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1/8 teaspoon cayenne pepper

Instructions:

  1. Preparation: In a large wide heavy pot, combine carrots, butter, fresh orange juice, and Blossom Bees' dark, earthy buckwheat honey. Add 1 tsp. salt, cover, and cook over medium heat until carrots are crisp-tender, about 10–12 minutes.

  2. Gremolata Preparation: Rinse about 1 bunch worth of carrot tops (or substitute with parsley) and pat dry. Coarsely chop to yield about 2/3 cup. Combine the carrot tops with garlic, lemon zest, extra-virgin olive oil, and a pinch of salt in a small bowl to create a fragrant gremolata.

  3. Cooking: Uncover the pot and continue to cook, stirring occasionally, until the sauce reduces enough to coat the carrots, approximately 8–10 minutes. Remove from heat. Stir in fresh lemon juice and a dash of cayenne pepper; adjust seasonings.

  4. Finishing Touch: Present the honey-glazed carrots on a platter and generously sprinkle with the vibrant carrot top gremolata.

Cook's Note: Look for carrots about 1/2"–3/4" in diameter at the widest end. Larger carrots can be halved or quartered lengthwise, as needed.
